Using phone records to prove messaging at a certain time?

I've gathered great info from this forum, especially from GeekBoy, regarding my wireless bill. However, I'm stil having difficulty with the big picture. From what I understand, the following is true for iPhone users:

 

My bill shows data charges in three hour increments. Data usage may be due to apps updating automatically. (I understand how to see data usage, by app, and how to turn off auto updates on the phone.) Data usage may be due to messaging in an app. "Internet or Media Data" on my bill shows data usage, but there's no way to determine how that increment of data was used. If the phone is used on wi-fi, no data is used or tracked (I think.)

 

Taking all of the above into account, there's no way for me to use my ATT billing records to show, with complete certainty, that my son (for example LOL) was up all night messaging, in whatever form. Am I correct?
