Generating charges because phone keeps turning functions off

I am very unhappy with customer care and my phone at this point.  I have a Galaxy S5 that has given me trouble since i got it in May.  The latest is data charges.  I kept getting notifications that i was over on data.  I finally realized that my phone is turning the wi-fi off so that it goes to my data charges.  This is not all it has been doing.  Here is a list of the few problems i have been having:

email:  I will delete email - an hour later, they are all in my in-box again.

text:  Saturday i was at a 5K with 3 grandchildren under the age of 5, carrying a bicycle and 2 sweatshirts looking for my son.  I get a text from him -- "I am tracking you" and then a call.  Why?  Because my phone sent several texts to him.  "Sorry i'm busy. Call back later" several times and "I'm driving."  He thought they were crytic messages and just about called the police.  When i asked a tech, he explained that i had turned that function on.  Sure - with 3 kids in tow, holding a bicycle and sweatshirts - i reached into my back pocket to make those changes?  Then the next day, i was shopping, went to text my daughter-in-law and it told me my data had been turned off. Tried to email - same thing.  Called tech support -- they again said i had set the function.  Not possible -- i hadn't touched the phone, especially not to go through 3 screens to get that function turned off.

About 30% of the time when i get in my car, i have to turn on the function again -- i have not turned it off.

But the biggest problem is that i now have all of these data charges because it keeps turning off my wi-fi.  So i am listening to Pandora for 8 hours in my home where the wireless connection is ideal not knowing that i was using data from my phone instead and all the while incurring charges.

I explained all of this to 2 different agents who i do not believe were anywhere on this side of the ocean and was told that i was responsible for the data i used and suggested over and over that i turn that function off which means i would have to turn it back on when i wanted to use the data function which is often.

I do not feel i should be charged for the overuse and at the suggestion of the gentleman at Costco, i am going to request a new phone.  He believes mine is defective.  I will do that but i am too angry to make that call.  I was treated as though i was a 5-year-old.  I do not feel those charges should be levied against me as i was not aware that the phone has been turning off functions.  I am very unhappy with AT&T and this seems to be the only avenue i have to voice those concerns.  I thought AT&T would be a great company who listened to their customers. Not so.
