Data usage keeps soaring

So I've been getting suspicious for awhile now, and this month I've finally had enough to say something about it.

My data usage on my phone every month since February has SOARED. I don't know why because I spend most of my time at home on my wifi and when I'm not at home I am very conscious with how I use my phone.

I joined AT&T March 2014 because when I moved because the area I now live it doesn't have Verizon. I started on their 4 GB plan and throughout the year I never went over. I was using about 3 GB, but never went over. Then in February 2015, I somehow DOUBLED my data usage and was at 6 GB.

I figured it was a fluky month and didn't think anything of it except to be more careful with my phone usage. What happens next month? Still at 5 GB. The following month? EIGHT GB. Finally I called AT&T and increased my data plan to the 6 GB with Rollover. The only thing that did was make my usage go up.

So finally, since my data usage was continually increasing I went to the 10 GB plan. And guess what? I'm told this month I went over again. How does someone who for a year wasn't even using 4 GB start consistently using more and more stats for a whole year, even when there's supposed to be Rollover and is very self aware about using it outside of wifi? I know all the tricks - turning off wifi assist, turning off background app refresh and there's been no improvements.

There's something else going on here. There's no way one person should be going through over 10 GB a month. I want answers. I can't afford these overages every month.
